Foo Fighters continued their one week residency on the Late Show With David Letterman with Tony Joe White joining them on Wednesday to perform his classic ‘Polk Salad Annie’.

White wrote ‘Polk Salad Annie’ in 1968. The original version was recorded at the famed Muscle Shoals studios in Alabama.

White grew up is Louisiana and wrote the song about his childhood. “I spent the first 18 years of my life down there,” said White. “My folks raised cotton and corn. There were lotsa times when there weren’t too much to eat, and I ain’t ashamed to admit that we’ve often whipped up a mess of polk sallet. Tastes alright too.. a bit like spinach,” he once said.

Holy cow, what do you want. Man alive, I tell you something (and it’s just between us), if I was this guy you could all kiss my ass. And I mean that. That was delightful,” Letterman said after the performance.
